This recipe was inspired by Julia Child the first female celebratory chef. She introduced America to French cooking and inspired generations of home cooks.
This dish is a great way to introduce your child to eggplants. They are nutrient dense, with fiber, vitamins and minerals. As an added bonus the antioxidants in the skin of an eggplant, responsible for the vibrant color, have been shown to protect cells from damage.
Our organic eggplants are sourced from Norwich Meadows Farm. They have been written up in the New York Times and are used by many high-end NY restaurants.
